Orak Arik Buncis from Solo
Indonesian Cuisines - Orak-arik Buncis is a simple homestyle dish popular among Indonesian families. In some places called Oseng-oseng Buncis. The use of scrambled eggs add a dash of color and luxury to the meal, and serves to attract even the youngest in the family, who may not always be big fans of vegetables. The cooking method of orak-arik buncis Solo is presumed to refer to the Dutch immigrants society apparent from the use of egg, green beans and other minimalist ingredients.
Almost every Indonesian must have had tasted his or her mother’s orak-arik buncis. In fact, it’s safe to say that every household has its own interpretation of the stirfry. Some like to cut the beans thinly and diagonally; others like bigger, roughet cuts. Some like to add a dash of pepper. Others like to add shallot and/or tomatoes

INGREDIENTS (serves 10-12):
- 100 gr 10 pcs shallots, finely sliced
- 8 gr 3-4 pcs garlic cloves, finely sliced
- 60 gr 3 pcs red chilies, deseeded, sliced
- 20 gr 2 cm galangal, crushed
- 3 gr 3 pcs Indonesian bay leaves
- 26 gr 2 pcs lemon grass stalks, crushed
- 250 gr 5 pcs chicken gizzard, sliced
- 200 gr shrimp, remove heads and skin
- 7 gr 1-1 1/2 teaspoon salt
- 5 gr 1 teaspoon sugar
- 500 gr green beans, diagonally sliced by 1/2 cm
- 100 cc water
- 1 -1 1/2 tablespoon tamarind juice
DIRECTIONS:
- Fry the shallots and garlic until well cooked and aromatic. Add chilies, galangal, Indonesian bay leaves and lemon grass stalks. Fry until cooked through, then bring in the chicken gizzards, shrimp, salt and sugar.
- When the gizzards are cooked through, bring in the green beans and water. Continue until the vegetable is cooked throug Add the tamarind juice just before removing from heat.
- Add more water if more sauce is desired. Season with salt and sugar to taste
